On May 5th, millions of people across the United States celebrate Mexico’s vibrant culture and heritage in commemoration of the country’s unexpected victory over France in the 1862 Battle of Puebla during the Franco-Mexican War. Knowing how popular “papas” are, the Idaho Potato Commission has worked closely with several food bloggers including Ericka Sanchez (Nibbles and Feasts) and Nicole Presley (Presley’s Pantry) to create a collection a mouth-watering “South of the Border” recipes for your Cinco de Mayo celebration.
