Meal prepping for the week? Don’t forget about lunch!
Yes, the midday meal’s profile is rising especially as work from home policies are extended and many kids are learning online. If you’re a traditional three-squares a day (plus snacks, of course) type person we recommend a meal that’s high in protein and carbs, and low in fat like Cheese Potato Broccoli Cakes. Shredded Idaho® potatoes are combined with cheddar cheese, seasoned broccoli and eggs then pan-fried until golden brown and crispy. Add a small side salad and voila…a meal everyone will love to take a break for!

Soup may be the perfect lunch. It's easy to make ahead (and soup is almost always better the next day anyway!) or bust out the Instant Pot for day-of cooking. The house will smell great and it's a great midday warmup as we head into fall.
