Meal prepping for the week? Don’t forget about lunch!
Yes, the midday meal’s profile is rising especially as work from home policies are extended and many kids are learning online. If you’re a traditional three-squares a day (plus snacks, of course) type person we recommend a meal that’s high in protein and carbs, and low in fat like Cheese Potato Broccoli Cakes. Shredded Idaho® potatoes are combined with cheddar cheese, seasoned broccoli and eggs then pan-fried until golden brown and crispy. Add a small side salad and voila…a meal everyone will love to take a break for!
Try some of our other recipes that are super easy to make with your kitchen gadgets like air fryers for French fries and Instant Pots for soups that’ll warm you up on chilly days.
