Traditionally South of the Border meant Mexico but in recent years we’ve seen an influx of recipes and flavors from countries like Cuba, Peru and Brazil that are popping up on menus across the country. These dishes usually combine potatoes with fresh vegetables, a lean protein, and an array of tongue-tingling spices.
