In March, everyone is Irish and so is all the food, regardless of its origin! Chef Patterson Watkins of the Children’s Hospital of Philadelphia celebrates March 17th by cleverly turning a south of the border favorite into an irresistible appetizer or main dish. Idaho potato waffle crisps are sprinkled with sharp cheddar cheese, diced corned beef and freshly grated horseradish. After the Irish Style Nachos with Idaho Potatoes bake for about 10 minutes, truffle oil is drizzled on top and the dish is garnished with chopped chives. It’s so delicious, it could become a permanent item on your menu!
