This year try a little culinary tomfoolery on April 1st!

Maybe folks don’t realize just how versatile the Idaho potato is beyond fries, tots and chips. Mashed and dehydrated potatoes are often the secret ingredient in many baked goods. If you’ve ever but into a donut, cupcake or roll that was exceptionally moist, it was probably made with potatoes.

Food blogger Stephani Pollack of the Cupcake Project uses fresh mashed potatoes to make Gluten-free Peanut Butter Crackers. This easy-to-make snack is a great for after school or lunchboxes!

And, believe it or not, potatoes can also be used as an ice cream ingredient. Vegan Coconut Blackberry Idaho Potato Ice Cream uses just five ingredients and it’s out of this world delicious!

So go ahead and have some on April Fool’s Day. This is one joke your friends will be happy to be the blunt of!
