Idaho® Potatoes Shine at Annual International Association of Culinary Professionals in Louisville, Kentucky
At the International Association of Culinary Professional’s Annual Meeting held recently in Louisville, KY all eyes were feasting on Idaho® potatoes. Internationally acclaimed chef/author Raghavan Iyer promoted his new book, Smashed, Mashed, Boiled, and Baked, which is all about our favorite vegetable, the potato – and, he gives several shout outs to Idaho potatoes!
While at the meeting he prepared Persian Style Idaho® Potatoes and Egg for the attendees and it’s no surprise they were an instant hit. Below is the recipe as well as one for Roasted Idaho® Fingerlings with Rock Shrimp which was served during lunch and wowed the entire room full of culinary influencers. Enjoy!
Established in 1937, the Idaho Potato Commission (IPC) is a state agency that is responsible for promoting and protecting the famous "Grown in Idaho®" seal, a federally registered trademark that assures consumers they are purchasing genuine, top-quality Idaho® potatoes. Idaho's ideal growing conditions, including rich, volcanic soil, climate and irrigation differentiate Idaho® potatoes from potatoes grown in other states.
