Put a little spring in your step with these delicious Idaho potato recipes that feature fresh-from-the-garden ingredients. Herb Chicken, Vegetables and Idaho Baby Gold Potato Kabobs are healthy, a snap to prepare and perfect for grilling. If outdoor cooking isn’t possible, try Idaho Potato Gnocchi with Spring Peas and Prosciutto. The melt-in-your-mouth dumplings are easier to make then you might think, and are always a hit with kids. For a light meal that can be prepped in advance, we suggest Baked Idaho Potato with Baby Spinach Tapenade and Goat Cheese with Pine Nuts. Iron-loaded spinach combined with heart-healthy Idaho potatoes, olives and anchovies create a one-dish meal that gets two thumbs up for flavor and nutrition!
