For a more classic dish, Chef Brad Gilmore of Urban Table in Prairie Village, Kansas offers Urban Table Idaho® Morning Potatoes, made with red peppers, caramelized onions, Parmesan, herbs and eggs. To enhance the flavor of these ingredients, the vegetables are first sautéed in a nonstick skillet and then mixed with eggs and milk before being placed in the oven for fifteen minutes to create a fluffy, yet firm texture.
