What are your thoughts on using Idaho potatoes not just for breakfast, but for brunch, lunch or dinner?

Why limit yourself to just serving potatoes for breakfast? Phil Lempert, Supermarket Guru, argues the belief among consumers that breakfast is the most important meal of the day will become commonplace in 2013. So if it is great at 6 AM, why not fix the same recipe for dinner at 6 PM?
