Without mayonnaise, a vinaigrette flavored potato salad such as the traditional German potato salad can be placed in the freezer. How it comes out, is another story. When thawed, the liquids tend to separate from the potato and some have described the results as a chilled, soupy salad. How long ahead do you need to prep the German potato salad before serving? The mixture should last several days in the refrigerator, placed into a plastic baggy or a closed plastic storage container.
One method I describe in my post from couple of years ago is to keep the ingredients separate and just cook, cool and freeze the chunks of potato for later use:
