Why do have an “earthy” flavor sometimes after you cook them?
When potatoes are put into storage, they leave the dirt on. It helps protect the outer skin from bruising. If they were washed, they would not hold up well in storage. So, they are not washed until ready to bring into a facility for sorting and placing into cartons or bags. Soaking potatoes in water with a little lemon juice or white wine vinegar when you are ready to prepare them will help get rid of the earthy flavor.
