IDAHO® POTATO COMMISSION INVITES CONSUMERS TO AIR FRY THEIR POTATOES

A healthier approach to cooking delicious Idaho® potatoes, air fryers are putting a new spin on spuds


Eagle, Idaho (June 24, 2016) -- The Idaho Potato Commission (IPC) recently enlisted two popular food bloggers to create Idaho® potato recipes that are prepared using one of the hottest new cooking tools for home chefs, the air fryer. This new device circulates extremely hot air around food to create crispy mouth-watering dishes. Available on kitchenware websites, air fryers provide consumers with an innovative way to make their favorite Idaho® potato recipes even healthier.

“Potatoes are naturally fat-, cholesterol-, sodium- and gluten-free, and we are always looking for new ways to prepare potatoes that maintain their healthfulness,” explained Frank Muir, President and CEO, IPC. “We look forward to seeing what other potato recipes this unique tool will allow consumers to create.”

Susan Palmer of Girl in the Little Red Kitchen created melt-in-your-mouth delicious Air Fryer Lemon Parmesan Hasselback Fingerling Potatoes. These tiny taters have a tangy hint of lemon and are topped with crispy parmesan cheese. They take about 30 minutes to cook and each serving has only 120 calories.

Two other must-try recipes are Palmer’s Air Fryer Curly Fries with Bacon Chive Dip and Betsy Life creator Betsy Haley’s Air Fried Rolled Potato Tacos. These incredibly satisfying appetizers promise to please dinner guests of all ages.

Curly fries are an immensely popular snack, but many people are not big fans of the accompanying grease. The absence of oil gives these air fried fries a delicately crunchy coating, perfect for scooping the bacon chive dip.

Betsy’s Air Fried Rolled Potato Tacos are in a league of their own when it comes to south-of-the-border taste. Creamy mashed potatoes meld seamlessly with crisp corn tortillas, fresh guacamole and melted cheddar cheese. Mix and match any salsa for an extra kick. These grease-free tacos are sure to become a family favorite, and vegetarians are guaranteed to dig in!

Air Fryer Lemon Parmesan Hasselback Fingerling Potatoes

Servings: 4

Ingredients:

  • 1lb Idaho® Fingerling potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • 1 lemon, zested
  • 2 teaspoons chopped rosemary
  • 1 tablespoon grated parmesan cheese

Directions:

  1. Using a sharp paring knife, cut slits lengthwise down each fingerling potato, making sure not to cut all the way through so the potato stays connected
  2. Place the potatoes in medium bowl and toss with olive oil, 1 teaspoon of lemon zest, chopped rosemary and salt.
  3. Place the potatoes in the air fryer basket, set the temperature to 392°F and cook for 30-35 minutes or until the potatoes are cooked all the way through and the skins are crisp and roasted.
  4. Carefully remove the potatoes from the air fryer, place in a medium bowl and toss with the remaining lemon zest and parmesan. Season to taste with kosher salt and black pepper.
  5. Serve immediately.
