Idaho® Potato Crab Tots
Ingredients:
- 12 Idaho® potatoes, boiled and mashed
- 2 lbs. lump crabmeat
- 2 quarts panko breadcrumbs, divided
- Salt and pepper, to taste
Directions:
- Combine mashed potatoes, crab meat and 1 Qt. breadcrumbs, mix thoroughly.
- Roll mixture into balls. Roll balls in remaining 1 Qt. breadcrumbs.
- Fry at 350°F until golden brown.
Yield: Yields approx. 100.
