Idaho® Potato Crab Tots
Yields approx. 100.
12 Idaho® potatoes, boiled and mashed
2 lbs. lump crabmeat
2 quarts panko breadcrumbs, divided
Salt and pepper, to taste
Combine mashed potatoes, crab meat and 1 Qt. breadcrumbs, mix thoroughly.
Roll mixture into balls. Roll balls in remaining 1 Qt. breadcrumbs.
Fry at 350°F until golden brown.
