White Cheddar/Chipotle Smashed Potatoes
- 2 lbs. Idaho® russet potatoes, cut into chunks and cooked until tender
- 3/4 to 1 cup hot milk or half and half
- 2 Tbs. butter
- 2 Tbs. sour cream
- 1 tsp. kosher salt, or to taste
- 1 cup shredded extra-sharp White Cheddar cheese
- 2+ Tbs. chipotle sauce (Cholua)
- Strain potatoes.
- Smash potatoes with potato masher; add other ingredients
- Mix well but leave a little chunky.
- Serve hot.
