A proud fifth-generation Idahoan, Megan Underwood is deeply rooted in her culinary heritage and committed to championing local ingredients, ensuring quality, and advocating for sustainability within the food industry. Her passion for cooking was nurtured by her family, particularly her mother, who instilled in her a love for food at a young age.
Megan’s culinary journey began with formal training in Portland, Oregon, and Seattle, Washington, followed by an exploration of diverse cuisines during her time in Hawaii and Montana. Upon returning to Idaho, she has focused on enhancing the state’s culinary landscape while supporting aspiring chefs in the region. Over the years, Megan has held roles such as executive chef, culinary trainer, food and beverage manager, and general manager.
Today, Megan’s work centers around creating unique culinary experiences that blend flavors, textures, and aromas, telling stories of tradition, innovation, and environmental consciousness. She brings her expertise, creativity, and unwavering dedication to every dish she prepares.
Megan’s Potato Lefse Chilaquiles recipe was selected as one of the standout creations in the It All Starts with An Idaho® Potato campaign, earning national visibility in FSR Magazine, Flavor & The Menu, Nation's Restaurant News, and other prestigious industry publications for the 2024-25 season.
