Mark Banks is the Senior Executive Chef at Brio Living Services at The Cedars of Dexter in Dexter, MI. His culinary journey began in his family kitchen, learning from his mother and grandmother, who taught him how food could bring people together and express love.
A graduate of the Professional Culinary Arts program at Schoolcraft College, Mark has over 20 years of experience and has worked with mentors such as Certified Master Chefs Dan Hugelier and Shawn Loving. Today, he creates custom culinary experiences for events and daily meals at Brio, while mentoring the next generation of chefs.
Known for his positive energy, Mark inspires his team with phrases like “You got this!” and “It’s nothing to it but to do it!” He is committed to providing nourishing food and exceptional service throughout the Brio community.
Mark’s Duchess Potatoes recipe was featured in the It All Starts with An Idaho® Potato campaign, receiving national visibility in FSR Magazine, Flavor & The Menu, Nation's Restaurant News, and more for the 2024-25 season.
