Potato Mochi

Ingredients:

• 2 Russet Potatoes, cooked and mashed
• Potato starch
• Glutinous Rice Flour
• Cooked pork chorizo

Instructions:

1. 2 Russet Potatoes, cooked and mashed
2. *Weigh your mashed potato*
3. Add 5% of the weight of Potato Starch and an equal amount of Glutinous Rice Flour to the mashed potato
   1. For example, if your mashed potato weighs 200 g, you will add 10 grams of Potato Starch
