Shrimp, Bacon and Chive Idaho® Potato Salad
Ingredients:
- 1/2 cup sour cream
- 1 cup mayonnaise
- 1/2 cup crème fraiche
- 2 tablespoons basil
- 1/2 ounce lemon juice
- 1 teaspoon Old Bay seasoning
- 1/2 cup honey
- 2 tablespoons whole grain mustard
- 1 teaspoon ancho chile powder
- To taste salt and black pepper
- 4 Idaho® potatoes, washed, baked, peeled and cut into 3/4 inch cubes
- 1/2 pound shrimp, cooked, chopped
- 1/2 pound bacon, cooked and diced
- 2 tablespoons chives, sliced
Directions:
- In a bowl prepare the dressing by mixing the sour cream, mayonnaise, crème fraiche, basil, lemon juice, Old Bay seasoning, honey, whole grain mustard, ancho powder, salt and black pepper.
- Fold in the potatoes, shrimp, bacon, chives & adjust seasoning to taste.
