Roasted Shallot Garlic Dip
- 1 qt sour cream
- 2 cups finely sliced shallots
- 2 cups fresh garlic cloves -sliced
- Salt & Pepper
- Sauté shallots and garlic till brown and crispy. (Almost fried, but not deep-fried). Drain well.
- Blend shallots and garlic with sour cream. Season to taste with salt and pepper. Chill.
- Note: slice potatoes lengthwise to create longer chips and
- leave the skin on.
