Herb and Garlic Mashed Potatoes

A simple stove-top recipe for garlic mashed potatoes, brightened up with herbs, that can be made in under 30 minutes!

Ingredients:

  • 1 pound russet Idaho® potatoes, peeled and cut into 1" cubes
  • 1 teaspoon salt 
  • 1 tablespoon Litehouse® freeze-dried garlic 
  • 1 tablespoon Litehouse® freeze-dried chives
  • 1 tablespoon Litehouse® freeze-dried dill 
  • 2 tablespoons butter 
  • 4 tablespoons sour cream 
  • Salt and pepper to taste 

Directions:

  1. Place potatoes in a medium pot and cover with water, by one inch. Add salt and garlic. Bring to a boil. 
  2. Lower heat and simmer gently for 15 minutes, uncovered. 
  3. Add chives and dill. Continue simmering until potatoes are for tender, about 5 more minutes. 
  4. Strain using a fine mesh strainer. 
  5. Return potatoes back into the pot, tapping the strainer on the edge of the pot to release the herbs and garlic back into the potatoes. 
  6. Mash until creamy and smooth using a potato masher, and stir in butter and sour cream. 
  7. Season with salt and pepper to taste.
