Chorizo Idaho® Mashed Potatoes
- 6 Idaho® Potatoes, washed, peeled and cut into 3/4 inch cubes
- 8 ounces cooked chorizo, medium diced
- 2 ounces butter
- 1/2 cup sour cream
- 1/2 cup heavy cream
- 4 ounces cheddar cheese, shredded
- To taste salt and black pepper
- Boil potatoes in salted cold water until tender.
- Remove and drain, lightly dry them out in the oven, then transfer to a Hobart mixing bowl. With the paddle attachment, mix all ingredients in and season to taste.
