Chorizo Idaho® Mashed Potatoes


  • 6 Idaho® Potatoes, washed, peeled and cut into 3/4 inch cubes
  • 8 ounces cooked chorizo, medium diced
  • 2 ounces butter
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 4 ounces cheddar cheese, shredded
  • To taste salt and black pepper


  1. Boil potatoes in salted cold water until tender.
  2. Remove and drain, lightly dry them out in the oven, then transfer to a Hobart mixing bowl. With the paddle attachment, mix all ingredients in and season to taste.
