Loaded Baked Potato Wedges
- 1 leftover baked Idaho® potato per person
- Bacon, to taste
- Shredded cheddar, to taste
- Scallions, to taste
- Sour cream, for serving
- Cut potatoes into 8 wedges and deep fry to golden brown.
- Toss in salt and pepper.
- Top with bacon and cheddar and melt under broiler.
- Top with scallions and serve with sour cream on the side.
