Karen Mangum MS, RDN, LD, a licensed, bariatric registered dietitian, is a seasoned recipe developer and healthy food blogger in addition to her work as a bariatric dietitian. Karen has been counseling bariatric patients for over 15 years and currently works for St. Luke’s Medical Center Bariatric Surgery Program where she has been providing counseling and bariatric cooking classes for over 5 years. She started her healthy food blog, Inside Karen’s Kitchen, as a way to preserve her family’s recipes and to share bariatric recipes. 

Previously, Karen was a regular contributor for Cooking Light and Weight Watchers magazines and cookbooks. In addition, she has been a regular guest on her local television news programs for over 20 years. Karen has also been an adjunct faculty member at Boise State University. She received her master’s degree in nutrition from Brigham Young University, is married to Michael and the mother of five children. She is an active volunteer in her church women’s organization and enjoys the best of Idaho's outdoor lifestyle including tennis, snow skiing and white water river rafting.

Inside Karen's Kitchen, a healthy food blog, is the genesis of my over 30 years experience as a registered dietitian, food writer/recipe developer for Cooking Light and Weight Watcher's magazines along with many more years as a wife and mother of five. The Idaho lifestyle with its focus on outdoor activities, seasonal living and a vibrant community which fosters health and well being is the inspiration for many of my recipes. You'll find a healthy balance of nourishing recipes along with occasional goodies all designed to show how to eat healthfully and mindfully. The blog features recipes that use fresh wholesome ingredients, focus on whole foods, are made from scratch and are easy to prepare, all important criteria for today's busy families. Since I currently work as a dietitian in a weight loss surgery program, many of the recipes are tagged for folks lookin g for lower carbohydrate, higher protein content. Inside Karen's Kitchen is a blog fueled by foods that nourish and heal.
