I often look to chefs and restaurants for inspiration and these left over loaded mashed potatoes are the best. The first time I was served this mashed potato at a restaurant I had to have the recipe! Make sure you have all the rest of the ingredients on hand: bacon, Spanish onions, spring onions or scallions, lots of cheddar cheese (I like to use Tillamook sharp cheddar), and olive oil. Start with a cast iron skillet to have these turn out the very best. Re-fried Mashed Idaho potatoes go really well with left-over turkey or a pork tenderloin.
