Raspberry Mashed Potatoes
- 6 peeled white potatoes
- 3 cups passion fruit juice
- 1/2 cup cream
- 6 oz butter
- Salt and pepper to taste
- 2 cups raspberries
- Reduce the passion fruit juice to a glaze.
- Steam potatoes until tender.
- Whip potatoes with cream and butter and add the passion fruit glaze.
- Season with salt and white pepper.
- Fold in the fresh raspberries.
