Raspberry Mashed Potatoes


  • 6 peeled white potatoes
  • 3 cups passion fruit juice
  • 1/2 cup cream
  • 6 oz butter
  • Salt and pepper to taste
  • 2 cups raspberries


  1. Reduce the passion fruit juice to a glaze.
  2. Steam potatoes until tender.
  3. Whip potatoes with cream and butter and add the passion fruit glaze.
  4. Season with salt and white pepper.
  5. Fold in the fresh raspberries.
