Idaho® Potato Stuffing Balls 

This Thanksgiving we recommend adding a new dish to the menu — one that combines two Thanksgiving favs — mashed Idaho potatoes and stuffing, Idaho Potato Stuffing Balls. Mashed Idaho potatoes, stuffing, pan-fried pancetta, olive oil or leftover pancetta grease and salt and pepper are all you need to make these mouthwatering two-bite morsels. While the oven is preheating, combine the ingredients and shape into 2-inch, compact balls so they don’t fall apart while baking. Lightly grease each tater-stuffing ball with olive oil or pancetta grease to form a crispy, golden-brown outer shell and fluffy, moist inside.

There’s a New Star in the Sky... It’s Idaho Alpha Spud Tauri 

It’s a bird, it’s a plane, it’s Idaho Alpha Spud Tauri, a shiny bright star in the sky named after the most famous potato in the universe. The Idaho Potato Commission launched a contest asking folks to help name the star. Leslie Price of Oregon won the grand prize and is now enjoying her new telescope, $500 and a fresh box of Idaho potatoes. Stargazers, here are the coordinates for Idaho Alpha Spud Tauri. Confetti Mashed Potatoes

Confetti Mashed Potatoes from food blogger Lisa Lin at Healthy Nibbles and Bits are speckled with red, orange and green bell peppers, red onion and chives, adding a pop of color to your spread. With each bite, bits of chopped and sauteed veggies provide a crunchy texture and added nutrition. Simple to prepare, these are great to whip up any time of year!

Q: What do I do with leftover Thanksgiving Mashed Potatoes? 

A: Leftover mashed potatoes that are stored in an air-tight container can last in the refrigerator for up to three days and can be reheated using any method. On the stovetop use medium heat, and in the oven bake at 350° F for 20-30 minutes. Stir regularly and add a little warmed-up stock, milk and/or butter to taste and to keep the spuds from drying out. Reheating time will vary based on the quantity of mashed potatoes.

Expect less time reheating in the microwave; be sure to change the setting to medium to high-power and stir more frequently. 

Don’t limit yourself to ‘just’ an encore of mashed potatoes. Try folding in fresh-diced peppers, onions and grated cheese or seasoned leftovers to form potato pancakes. Heat until slightly crispy in a lightly-oiled skillet to enjoy with your post-Thanksgiving breakfast. Or, make these savory Leftover Mashed Potato Muffins!
