It is so hectic at Thanksgiving, anything that can be done ahead of time just makes sense. Peel the potatoes, cut into even sized chunks and add some acidity to the chilled water. A teaspoon of white wine vinegar or concentrated lemon juice will help keep the potatoes from oxidizing and turning gray. Refrigerate covered until ready to use.
