Can I peel and cut my potatoes the night before, leave them in cold water, and boil them the next day?

A:

It is so hectic at Thanksgiving, anything that can be done ahead of time just makes sense. Peel the potatoes, cut into even sized chunks and add some acidity to the chilled water. A teaspoon of white wine vinegar or concentrated lemon juice will help keep the potatoes from oxidizing and turning gray.
