Idaho® Potato Truffle Fries with Parmesan

National French Fry Day may have been on July 13th, but that doesn’t mean you can’t celebrate one of America’s favorite ways to eat potatoes the rest of the month! Make these unforgettable Idaho® Potato Truffle Fries with Parmesan that are great as a snack or side dish. Either baked or deep fried, these mouthwatering spuds are a breeze to prepare and are sure to be devoured the minute they’re plated. Here’s a tip from the pros: Prep the cut potatoes by soaking them in water; this removes excess starch and guarantees fries that are crispy on the outside and light and fluffy on the inside. Don’t forget the ketchup and dipping sauces!

Celebrating Camping Season with Idaho® Potatoes

With social distancing orders extending throughout the summer, camping is more popular than ever before. In fact, about 40 million people will be spending a night or two under the stars this year. We know that meal prepping is key to a successful camping trip, and potatoes are the perfect veggie to pack since you can eat the entire tuber, making your “leave no trace” efforts a little bit easier. The IPC has a collection of recipes that have been created specifically for cooking over the coals. We recommend starting off your day with this delicious Portuguese Idaho® Potato and Chorizo Skillet that is made with seasoned potatoes, chorizo and eggs prepared in a cast iron skillet. Be sure to peruse all the recipes as you prep for your next outdoor adventure.

Ask Dr. Potato

Q: Do some varieties of potatoes have a different starch content than others?

A: Yes! Varieties like Idaho® russet potatoes for example, have a high starch content. As for colored varieties (e.g., reds, long whites, yellow types), these ‘waxy’ types of potatoes tend to have a lower starch content. Idaho® red potatoes are ideal for salads, skin-on roasted or mashed potato dishes, while an Idaho® russet is great for baked potatoes and crispy french fries.
