Potato Jelly Donuts

Soft, fluffy and bursting with strawberry jelly, these melt in your mouth Potato Jelly Donuts make a great companion to a morning cup of joe. Butter, sugar, whole milk, mashed Idaho® potatoes, eggs, vanilla extract, baking powder and soda are combined, divided into individual dough rounds then fried in oil. Idaho® potatoes give these donuts a light and airy texture making them easy to fill with your favorite jam using a pastry bag. Top the donuts with confectioners sugar to add a little extra sweetness. To save on prep time, whip up the mashed potatoes in advance and refrigerate, but make sure they are room temperature before you start making the donut dough.

Featured Farmer: Dan Moss

This month’s featured farmer is Dan Moss. Originally from northern Utah, Dan and his wife Jann moved to Idaho forty years ago when there was plenty of land to establish a farm. The couple has four children: Ryan, Mandi, Lana and Becky. They also have eleven grandchildren and five great grandchildren. Their son Ryan helps run the family farm’s day-to-day operations. Dan loves being an Idaho® potato farmer because it has allowed him to raise a family and cultivate relationships with people across the state. 

Treat Dad to a Grilling Feast with Idaho® Potatoes on Father’s Day 

This year fire up the grill and make a delicious dinner for the father figure in your life. A side dish that is sure to make his day, Grilled Cheesy Garlic Potato Packets pair perfectly with barbecued meats and veggies. Thinly sliced potatoes are drizzled in olive oil, sprinkled with spices and topped with sliced garlic then placed in aluminum foil shaped into bowls. After 15-20 minutes on the grill the potatoes will be fork tender and ready to be topped with shredded mozzarella cheese before serving. A light dressing made with balsamic vinegar gives this simple but stunning dish some extra pizzazz.

Curried Idaho® Potato Pot Stickers

Packed with flavor, wow your family and friends with Curried Idaho® Potato Pot Stickers created by food blogger Lisa Lin at Healthy Nibbles and Bits. Made with Idaho® potatoes, one yellow onion, a red bell pepper, peas, scallions, minced ginger and curry powder, this beautiful dish boasts bold Asian-inspired flavors. The vegetable mix is folded into individual pot sticker wrappers then sauteed in a pan until the bottom of each pot sticker is golden brown. Pro tip: Make sure to boil the potatoes until they are fork tender; overcooking will lead to lumpy potatoes when they are mixed in with the other ingredients.

Q: Are all the nutrients in the skin of a potato?

A: Though half the fiber content in a potato is lost when the skin is removed, many of the nutrients are found within the potato itself. A medium-sized potato with the skin on contains 620 mg of potassium and 27 mg of Vitamin C.
