Idaho® Potato Brioche Muffins

The yummiest companion to tea or coffee, a batch of Idaho Potato Brioche Muffins will make your morning extra special. Brioche is a traditionally French-style bread made with eggs, yeast and butter. The addition of a mashed Idaho potato in this recipe helps the muffins stay moist and fluffy, giving each bite a soft and velvety texture. We recommend making this recipe a day in advance as the sponge portion takes 2-3 hours to rise. Add a dollop of strawberry or grape jelly before serving to make them extra indulgent.

Did you know the Idaho potato website has lots of great activities, games and kid-friendly recipes? Next time the kids are clamoring for something new to do, head to the Idaho Potato Kid Zone. We know kids love potatoes just as much as adults do so we created a page just for them. You’ve heard of play dough – how about potato dough? Yes, America’s favorite modeling compound can easily be made from America’s favorite veggies. The page also has great recipes like Gluten-Free Fried Mozzarella Sticks and Potato Quesadillas with Ham and Cheese downloadable quizzes, coloring books and activity pages. If you don’t have a printer handy, have the kids build their own virtual baked potato online or play a fun quiz online.

Looking for recipe inspiration this Easter? The Idaho Potato Easter recipe collection features a variety of dishes, including Easter bread to help celebrate this holy day. Easter bread is a centuries long tradition for many European countries, especially the Byzantium and Orthodox Christian churches. The sweet bread is often made in the shape of a ring and decorated with symbols like crosses, flowers, braids or wheat stalks. If Easter Bread is on your menu, be prepared… the loaves look too pretty to eat, especially when they are made with Idaho potatoes! Idaho® Potato Panzanella Salad

Crispy and perfect for the season, it doesn’t get more delicious than a bowl of Idaho Potato Panzanella Salad. Fried Idaho russet potatoes are combined with a colorful medley of veggies like heirloom tomatoes, Kalamata olives, diced celery, one large shallot, basil, chives and basil creating a side dish that pairs beautifully with your choice of meats or grilled veggies. The red-wine vinegar and extra virgin olive oil dressing adds a tad of tanginess to the dish.

A: To get them crispy and golden-brown, we recommend baking the potatoes for 25-30 minutes at 425°F.
