Ask Dr. Potato: Can potato salad be made three days ahead of time? 

A: Potato salad is best when it's prepared and served on the same day. But if it must be made in advance, I would recommend making it no more than one day ahead of time.

Exposure to air can turn refrigerated potatoes dark. After three days you may have a potato salad of a very unappealing color. It should also be noted that some recipes incorporate homemade mayonnaise and/or eggs, both of which will spoil within a few days, even refrigerated.

Here's a great trick. When you are boiling the potatoes, add lemon juice or white wine vinegar to the water. The acidity in these ingredients will help the potatoes retain their natural color during storage.
