Earlier this year, Idaho potatoes became the first vegetable to participate in the American Diabetes Association’s Better Choices For Life program. One in two Americans is living with diabetes or prediabetes and someone gets diagnosed with diabetes every 23 seconds. Baked Idaho Potato Chips

Potato chips are one of life’s most simple pleasures and they can easily be made at home! Thinly slice one pound of Yukon Gold potatoes and season with olive oil, salt, and pepper. Line a baking sheet with the sliced spuds and bake at 400°F for 10 to 12 minutes. Remove from the oven and add shredded parmesan cheese before returning to the oven for another 3 to 5 minutes. Transfer to a plate and snack away!

Q: How do I thicken up watery mashed potatoes?

A: Break out the instant dehydrated potatoes and mix them into the wet potatoes a tablespoon at a time. If you don’t have any dehy potatoes handy, leave the potatoes on the stove longer, being careful to stir frequently. You can also place them in the oven at 325° F for 10 to 15 minutes to "dry" out the mixture.
