Ask Dr. Potato: Are All Baking Potatoes From Idaho and Are All Idaho® Potatoes Automatically Considered A Russet Potato?
A: Thanks for your question. Just calling it a baking potato does not make it from Idaho. The bag needs to have the “Grown in Idaho®” seal clearly visible.
Many years ago, Idaho® potato growers primarily produced the Russet Burbank variety. When I joined the Idaho Potato Commission (IPC) in 1989, over 95% of all the potatoes coming out of Idaho were russets. As other varieties of russets became popular, like the Russet Norkotah, the IPC decided that the type of Idaho® potato needed to be correctly labeled on the bag, carton or box. Today about 50% of all potatoes grown in Idaho are the Russet Burbank. Other varieties include reds, yellows, golds and fingerlings. See our most popular varieties here...>
