The Big Idaho® Potato Truck is Back on the Road!

After a short winter break, the Big Idaho® Potato Truck is back on the road for its eighth national tour! One of the first appearances is in the World’s Shortest St. Patrick’s Day Parade in Hot Springs, Arkansas. The parade distance is 98-feet and the Truck is 72 feet long. If you're scratching your head, so are we!! If you go to the parade be sure to give a big wave to the team!! If you can't make it, check out the Truck’s itinerary to see when it will be coming to a city near you.

Q: Some of my stored potatoes are sprouting. Will removing the sprouts from the stored potatoes increase their storage life? The storage area has no light, is kept at 48°F and has fairly high humidity.

A: Even in the best of storage conditions, potatoes will eventually sprout. If allowed to continue as-is, the sprouts will grow and draw upon the moisture content of the potato. By removing the sprouts now, the potato will not dehydrate nearly as quickly. So yes, by removing the sprouts and continuing to store the potatoes away from light, unwashed and in the 48°F area, you will optimize the potato storage period. But don’t wait too long. Prepare and enjoy those wonderful Idaho® potatoes tonight! (And don't worry, we’ll grow more!)
