Quinoa Roasted Idaho® Potato and Caramelized Onion Bowl with Arugula and Tahini Dressing

Stick to your New Year’s healthy eating resolution by dishing up nutrient packed Quinoa Roasted Idaho Potato and Carmelized Onion Bowl with Arugula and Tahini Dressing. Fresh arugula is combined with quinoa and a mixture of roasted Idaho potatoes, red onion slices, garlic, crispy Brussels sprout petals and drizzled with a bright and flavorful tahini lemon dressing. The combination of raw and baked vegetables gives each bite a delightfully crunchy texture. To save time, prepare the quinoa and roasted veggies the night before. Add in the arugula and drizzle with dressing. Garnish with thinly sliced fennel and a side of flat bread if desired. We promise this is one recipe you’ll go back to again and again!

Yellow Curry Idaho Potato Bowl with Tofu

We’ve got another recipe that will ‘bowl’ you over, Yellow Curry Idaho Potato Bowl with Tofu from food blogger Lisa Lin at Healthy Nibbles and Bits. Yukon Gold Idaho potatoes, bell peppers, radishes, carrots, baby spinach, pan-fried tofu and spices are flavored in a miso ginger dressing that packs a punch. Sprinkle sliced scallions, chopped roasted peanuts and red pepper flakes for added spice before you dig in.

Q: Does a potato lose its nutritional value or fiber content when baked, fried or microwaved?

A: According to USDA data, microwaving potatoes is the best way to retain their nutritional value. Boiling potatoes causes the most nutrient loss while frying adds fat and increases caloric content. However, none of these cooking methods change the fiber content. No matter how they’re prepared, Idaho potatoes are a rich source of nutrients.
