Leftover Mashed Idaho® Potato Muffins
Thanksgiving might be over but mashed potatoes are never out of season, especially when it comes to leftovers!
Preheat your oven to 400°F and add a beaten egg, spinach, shredded cheese, and green onions to your leftover spuds. Season to your liking before scooping the mixture into muffin tins, filling three-fourths of each divot. Pop them in the oven for 25-35 minutes until an inserted toothpick comes out clean. Sprinkle additional shredded cheese atop each muffin and bake for an additional two minutes or until melted. Remove from the oven and let cool for 5-10 minutes. Serve with sour cream and other toppings you love on your taters and enjoy!
