Cheddar Potato Soup with Broccoli

During a winter chill, there’s nothing like a hearty soup or stew to warm you up. Featured Farmer: Mark Darrington 

This month’s featured farmer is Mark Darrington from Declo, Idaho. A third generation farmer, Mark and wife Verla and have four sons - Ryn, Ragen, Brant and Brogan, two of whom are continuing the family legacy as Idaho® potato growers. Mark is proud to be a farmer and enjoys working in wide open spaces and nurturing the Idaho® potato plant from seed to harvest. His favorite way to enjoy Idaho® spuds is skin-on mashed potatoes with butter, sour cream, salt and pepper. 

 

Famous Idaho® Potato Bowl 

Are you ready for some football? The Ohio Bobcats will face the Nevada Wolf Pack in the Famous Idaho® Potato Bowl on January 3rd, 2020 at Albertsons Stadium in Boise, Idaho. Kickoff is at 1:30 PM MT. Make sure to head to the Famous Idaho® Potato Bowl website and get your tickets for what promises to be an exciting game. No worries if you can’t make it to the blue turf, ESPN will be airing it live.

Q: If I peel potatoes and store them in cold water, will they absorb the water?

A: Potatoes are porous, so some of the water will be absorbed, but not enough to alter the outcome of your recipe. Restaurants often do this with potatoes cut for fries, so the excess starches on the outer surface of the potatoes falls to the bottom of the container.
