Can Bacon Share The Oven With Baked Idaho® Potatoes At Breakfast Time?

Q:

Can I bake a potato and bacon at the same temperature in the oven for breakfast? I thought I saw a breakfast stuffed potato and egg recipe from Mr. Food a couple of years ago and want to try this over the holidays.

A:

Certainly. The common denominator is 400 degrees F. The baked potatoes will take one hour and the bacon can be put in the last twenty minutes. Preheat the oven to 400°F, add washed russets (Russet Norkotah and the Russet Burbank variety are the two most common types and Idaho grows both) right on the baking racks. For bacon, the instructions are the same: Turn on the oven and preheat to 400°F. Arrange the bacon in a single level on a baking sheet, without overlapping the strips. Place a rack in the lower third of the oven. The same temperature guidelines work for roasted Idaho® potatoes tossed in olive oil or vegetable oil. The roasted potatoes, cut up into 1 inch chunks, will take about one hour to cook too.
