Storing potatoes at temperatures below 41°F may cause your tubers’ starches to convert to sugar, giving them an unexpected sweetness that may not suit your savory dishes. To test your potato’s sugar level, use ketone testing strips (which can be purchased at Walmart or Amazon), press them on the potato flesh for 15 seconds and compare the result to the graph on the bottle. To keep starch content at an acceptable level, we recommend keeping potatoes in a cool dark place like a pantry, closet, or basement with an average temperature of 50°F.

Klaren Koompin is a third-generation farmer and Idaho native from American Falls; he and his wife, Cheryl, have two daughters. When asked what makes him proud to be an Idaho potato farmer, Klaren admitted farming is hard work, but it provides a healthy outdoor lifestyle, and he and his family enjoy helping grow food for the world.

Q: How long should I boil potatoes for mashed potatoes? 

A: Start by cutting potatoes into even-sized chunks, place in a pot, cover with cold water, and bring to a full boil for around 20 minutes or until tender. Drain the potatoes in a colander, then return them to the pot. Stir over medium heat for about 1 minute to evaporate any excess water. Now they’re ready to be mashed with your favorite add-ins!
