Garlic Mashed Potatoes and Grilled Garlic Shrimp
Ingredients:
Garlic Mashed Potatoes
- 3 pounds Idaho® potatoes
- 1 cup heavy cream
- 4 ounces butter
- 1 teaspoon fresh garlic, minced
- To taste salt and pepper
Grilled Garlic Shrimp
- 1½ pounds tiger shrimp, peeled
- 3 tablespoons extra virgin olive oil
- ½ cup mixed herbs (basil, tarragon, oregano)
- ½ teaspoon fresh garlic
- ½ teaspoon shallots
- salt and pepper to taste
Directions:
- Peel the potatoes, cut into cubes and boil in salted water until soft. Drain.
- Heat cream and butter in a medium saucepan until slightly warm.
- Add potatoes to a mixing bowl and slowly whip until smooth.
- Add warm cream and butter to the potatoes and mix for 2 minutes.
- Add garlic, salt and pepper and mix until thoroughly combined, about 1 minute..
Grilled Garlic Shrimp
- Preheat grill.
- Toss the shrimp with the oil, herbs, garlic, shallots, salt and pepper in a mixing bowl.
- Grill for 3-4 minutes, turning halfway through, or until pink on each side.
