“This contest is a home run for the IPC and home cooks.  Folks have a chance to win $250 simply for exercising a bit of creativity while preparing an Idaho® potato recipe.  In return, we receive a beautiful photograph that we can post on our website,” said Frank Muir, President and CEO, IPC.  “Jessica’s artistic interpretation captures the fresh, light flavors of Cilantro Lime Chicken and Idaho® Potatoes. Congratulations, Jessica!”

This month’s Recipe of the Month Photo Contest kicked off on February 1, inviting Idaho® potato lovers to prepare and photograph the Fudge Mocha Idaho® Potato Cake. Low in fat and calories, this recipe calls for instant Idaho® potato flakes as a key ingredient for this moist chocolate cake – a perfect treat for sharing with your sweetheart this Valentine’s Day. One lucky winner will receive a $250 cash prize and the photo will be shared along with the recipe on the IPC’s website, www.idahopotato.com.

To participate in this month’s contest, visit http://www.idahopotato.com/image_contest and link to the recipe and official contest guidelines and details, and to upload your original photo.  All entries must be received by February 25, 2011.
