Lent '19

Lent is a solemn 40-day period observed by Christians around the world that involves penitence and fasting. It begins on Ash Wednesday (February 26) and ends Easter Sunday (April 12). Many Christians refrain from eating meat on Fridays during this time, opting for vegetarian and seafood-based meals. We reached out to some of our food blogger friends and asked for their favorite Lenten meal.

Tina Dawson of Love is in My Tummy recommends Vegan Sheet Pan Tacos, a hands-down favorite in her house any night of the week. Spicy roasted Idaho potatoes, tofu, peppers and onions, and a rich cashew queso are the “meat” of the taco that’s topped with fresh pico de gallo, lettuce, cilantro and a squeeze of lime. Serve with a side of rice and beans, and dinner is served!

If you’re looking for a more traditional Lenten meal, food blogger, Kita Roberts of Girl Carivore put a spin on traditional fish and chips and created Dill & Idaho Potato Crusted Baked Fish and Chips. Potato flakes are used to coat fresh halibut and Idaho potatoes are sliced into crunchy baked chips.
