Never Store Potatoes On Ice

A:

Potatoes should never be stored on ice. The cold temperature will convert the starch into sugar, making the potatoes taste sweet. If stored this way the potato may actually freeze and break down when a consumer purchases these for home use. If made into French fries or oven fries they will turn dark or caramelize prematurely, even before being fully cooked inside. Dark fries are almost always a sign of over cooking or using potatoes that were stored below 40° F.
