I Forgot about Peeled Potatoes in the Refrigerator for a Week. Are these Still Okay to Eat?

Q:

I peeled, diced, rinsed and refrigerated yellow potatoes, but unfortunately I forgot about them. One week later they still look fine, there's no odor or discoloring, just a little white on the edges. Can these potatoes be cooked and eaten? I want to make potato pancakes with them.

A:

There is always a ‘could you’ and ‘should you’ set of answers to questions about food safety. It is possible, you may ask; could you use prepared potatoes that have been so prepared and refrigerated for a week? When it comes to food safety, it’s best not to speculate. Should you use any product that has expired or held beyond a reasonable period? No.
