Can I use potatoes that are too old and are a little soft?

If they don’t have an offensive smell and the softness is from losing some of the moisture, you are probably fine.  However, if in doubt, throw them out. A case of 50 pounds of potatoes that costs $10.00 is pretty inexpensive so you should not risk it.
